All grass-fed beef is leaner than grain-finished, with a deeper, more mineral, genuinely beefy flavor. Ours leans even further: our cattle are longhorn crosses, a hardy heritage breed known for naturally lean, lower-fat meat. We count that as a virtue — clean, healthy, full-flavored beef from an animal that lived right, on grass, with no grain, hormones, or rush.
It also means our steaks will not look or eat like a heavily marbled, corn-fed ribeye or Wagyu. There is less internal fat, and less of that soft, buttery richness a feedlot builds in. If a fat-laced Wagyu ribeye is what you’re after, we’ll be straight with you — we’re not your farm, and we’d rather say so now than have you disappointed at the table. Cook it like the lean, grass-raised beef it is and it’s outstanding: lower heat, pull your steaks at medium-rare (lean beef goes from perfect to tough fast), and rest before slicing. Roasts love low and slow with moisture; our ground is a lean everyday workhorse — add a touch of oil in the pan.

Roughly 100–120 lbs of finished, frozen beef for a couple or small family. A quarter shares a half with another customer, so the cuts are standard (no custom choices) and a quarter does not include a brisket.
Roughly 200–240 lbs, fully customizable — you pick steak thickness, roast sizes, and ground-beef ratio, and your half includes a brisket. The best value per pound for families who cook beef often.
